JANUARY SPOTLIGHT ON: The Culinary Services Director

Introducing Jose Diaz Martinez, the chef at Aegis of Granada Hills, who has been serving seniors since 1990. He enjoys preparing food for residents because instead of just getting involved in the appearance of a plate, as you would in a restaurant, he gets to become closely involved with the residents and their lives. Jose was professionally trained early on as a caterer. While running his own catering company, he worked part-time in a senior living community. Working with the seniors, he says, was a whole new ballgame. Not only do you prepare food that they enjoy eating, you get to take care of them physically through their nutritional needs. Also, Jose says, seniors have diverse gustatory backgrounds that they are only too willing to share with the chef. For example, if Jose is planning a special event his residents with backgrounds in food service will give him their ideas for how to prepare and present the menu. In this way the residents become members of the planning committee, rather than simply customers. Aegis of Granada Hills is very proud to have Jose as the head of our Culinary Services Department.
